Three Unique Ingredients - Three Unique Steps

 

Biotransformation

Biotransformation happens every time a beer goes through fermentation, particularly during High Kräusen - the peak of fermentation. This is when the yeast is most active and it can behave unpredictably when ingredients are introduced during this time.

Beta Glucosidase (Phantasm Powder)

β-Glucosidase is an enzyme found in Sauvignon Blanc grapes from New Zealand that induces biotransformation. When β-Glucosidase is introduced alongside hops, the hops emit Thiols with pungent tropical fruit aromatics and flavors that cannot be achieved simply by dry hopping.

Terpenes

We used terpenes because we really wanted to up the ante on the fruity and tropical flavors!

 

Step 1

This brew started out just like any other; we combined water with grain to create wort, then added specialty Idaho 7 and Sabro hops during the boil, and pitched yeast for fermentation.

Step 2

After fermentation, we added β-Glucosidase to reinduce High Kräusen and we added even more, hops to evoke stronger tropical, piney, and citrusy thiols from the hops than a normal dry hop.

Step 3

Right before we canned the beer we added a bunch of terpenes to give the beer maximum dankness. Get ready for a beer with a loud aroma, juicy flavor, and tropical notes on exhale!
